We source whole animals directly from small local producers practising chemical free and regenerative farming methods. We offer the highest quality pasture raised and free range produce to our customers in an environmentally sustainable and ethical manner. A number of the farms we source from carry biodynamic or organic certifications while most others enact similar practices but may not hold certifications.

Our approach focuses on minimising waste from each animal as we believe this is the best way to value the life that has been taken to put food on our table. We encourage customers to try a range of cuts from across the animal including the less popular but often undervalued ones.

The care taken at each step of the chain from farm to slaughter to butchery sets our produce aside and guarantees a rewarding experience.

Milko’s experience in operating his butcher shop in Colonnella, Abruzzo for 25 years as a third generation butcher brings a range of specialty Italian products to our offering in store.
